Reporting To: Operations Manager / Area Manager

About the Role

We are looking for a Store In-Charge who can take complete ownership of the day-to-day operations of a QSR outlet serving Specialty Coffee, Bowls, Bakery and other food products.

The Store In-Charge will be responsible for ensuring that the outlet operates smoothly, achieves its sales targets, maintains product and service quality, controls costs and wastage, and delivers a consistent customer experience.

This is a hands-on store leadership role requiring strong ownership, discipline and the ability to manage both people and numbers.

Key Responsibilities

1. Store Operations & Ownership

  • Take complete responsibility for the outlet's daily operations.
  • Ensure the store is opened and closed as per company checklist and timelines.
  • Maintain smooth coordination between bar, kitchen, bakery and service operations.
  • Ensure all operational checklists are completed accurately and on time.
  • Monitor store readiness before opening and throughout the shift.
  • Identify operational gaps and take immediate corrective action.
  • Escalate major operational, staffing, equipment or customer issues to the reporting manager.

2. Sales & Revenue Responsibility

  • Own the daily, weekly and monthly sales performance of the outlet.
  • Drive achievement of store revenue targets.
  • Monitor hourly sales and identify low-performing periods.
  • Improve sales through better product recommendations, upselling and team engagement.
  • Focus on increasing sales across coffee, bowls, bakery and other food categories.
  • Track product-wise sales and identify high- and low-performing SKUs.
  • Work with the Operations/Marketing team on local sales initiatives and promotions.
  • Ensure the team understands daily sales targets and works towards achieving them.

3. Team Management & Leadership

  • Manage baristas, kitchen team, bakery team and other store employees.
  • Prepare and manage staff deployment according to business requirements.
  • Ensure adequate manpower during peak hours and optimize staffing during low-footfall periods.
  • Conduct daily briefings covering sales targets, customer service, product focus and operational priorities.
  • Monitor employee attendance, punctuality, grooming and discipline.
  • Train and coach team members on store processes and customer handling.
  • Identify high-performing employees and recommend them for growth opportunities.
  • Address performance or behavioural issues promptly and professionally.

4. Product Quality & Food Safety

  • Ensure every product served meets company standards for taste, portion, temperature, presentation and consistency.
  • Maintain quality standards across:
  • Specialty Coffee
  • Espresso-based beverages
  • Cold beverages
  • Bowls
  • Bakery products
  • Other food items
  • Ensure recipes, portion sizes and preparation methods are strictly followed.
  • Monitor product freshness and shelf life.
  • Ensure FIFO/FEFO practices are followed.
  • Ensure proper storage, labelling and temperature control.
  • Maintain hygiene and food-safety standards throughout the outlet.
  • Immediately identify and correct quality deviations.

5. Inventory & Cost Control

  • Take responsibility for daily store inventory.
  • Monitor stock levels of coffee, milk, bakery products, food ingredients, packaging and consumables.
  • Ensure stock is received, checked, stored and recorded correctly.
  • Prevent over-ordering, stock-outs and unnecessary inventory holding.
  • Monitor wastage and identify the reasons behind wastage.
  • Maintain proper wastage records and take corrective action.
  • Ensure portion control and recipe adherence to protect food and beverage margins.
  • Coordinate with Purchase/Operations for replenishment requirements.
  • Report damaged, expired or short-stocked items immediately.

6. Bar & Coffee Operations

  • Ensure the coffee bar follows the company's beverage SOPs.
  • Ensure espresso machines, grinders and brewing equipment are properly maintained and used.
  • Monitor basic espresso calibration and beverage consistency.
  • Ensure correct recipes, measurements and presentation for all beverages.
  • Support the barista team during peak hours when required.
  • Ensure coffee equipment and workstations are cleaned and maintained as per schedule.

7. Kitchen, Bowls & Bakery Operations

  • Ensure kitchen and bakery teams follow approved recipes and SOPs.
  • Monitor preparation, portioning and presentation of bowls and food products.
  • Ensure bakery products are displayed, stored and handled correctly.
  • Monitor production quantities based on expected sales to minimize wastage.
  • Ensure food preparation follows hygiene and food-safety requirements.
  • Coordinate with the kitchen/bakery team to maintain availability of key products during operating hours.

8. Customer Experience

  • Ensure every customer receives a fast, friendly and consistent experience.
  • Monitor service speed and order accuracy.
  • Handle customer complaints and service recovery professionally.
  • Resolve beverage, food or service-related issues immediately wherever possible.
  • Gather customer feedback and communicate recurring concerns to management.
  • Maintain the overall Tribal Brew experience, energy and hospitality standards.

9. SOP & Process Compliance

  • Ensure all store SOPs are followed without shortcuts.
  • Conduct regular checks on:
  • Opening & closing
  • Cleaning
  • Food preparation
  • Beverage preparation
  • Inventory
  • Cash handling
  • Customer service
  • Hygiene
  • Equipment
  • Ensure all employees understand their respective SOPs.
  • Identify gaps in existing processes and recommend improvements.
  • Maintain proper documentation and store records.
  • 10. Cash, POS & Administrative ControlEnsure accurate POS billing and order processing.
  • Monitor cash handling and end-of-day cash reconciliation.
  • Ensure discounts, complimentary items and refunds are processed only as per company policy.
  • Monitor daily sales reports and store-level operational data.
  • Ensure all required reports are submitted within the defined timelines.
  • Maintain store documents, checklists and records properly.
  • 11. Store Maintenance & EquipmentEnsure the outlet is clean, functional and customer-ready at all times.
  • Conduct daily checks of equipment, furniture, electricals, plumbing and other store facilities.
  • Report breakdowns and maintenance requirements immediately.
  • Coordinate with the Operations/Facility team for repairs.
  • Follow up until critical maintenance issues are closed.
  • Ensure equipment is used correctly to reduce breakdowns and unnecessary expenses.

12. Daily Performance ReportingThe Store In-Charge will be responsible for maintaining and reporting key store metrics including:

  • Daily Sales
  • Sales vs Target
  • Category-wise Sales
  • Average Order Value
  • Product-wise performance
  • Wastage
  • Inventory variance
  • Staff attendance
  • Customer complaints
  • Order accuracy
  • Service speed
  • Store hygiene
  • Equipment/maintenance issues

  • Qualifications & Skills2–5 years of experience in QSR, café, specialty coffee, bakery, casual dining or similar food & beverage operations.
  • Experience managing a store/outlet with a team is preferred.
  • Working knowledge of Specialty Coffee, food operations and bakery products.
  • Strong understanding of store operations, inventory and wastage control.
  • Good knowledge of POS and basic store-level reporting.
  • Strong team management and leadership skills.
  • Good communication and customer-handling skills.
  • Ability to work under pressure during peak operating hours.
  • Strong numerical and analytical understanding.
  • Disciplined, accountable and highly execution-oriented.
  • Willingness to work hands-on on the floor rather than only managing from the back office.

“What is my store's sales today, what is affecting the sales, what is happening with my team, where are we losing money, and what action am I taking to improve it?”

The person should be comfortable working across Coffee + Food + Bakery + People + Sales + Operations and should take complete ownership of the outlet's performance.
