Position SummaryWe are seeking a qualified and experienced Dairy Technologist with a professional degree in Dairy Technology (B.Tech / M.Tech Dairy Technology) to lead the quality control, quality assurance, and research & development functions at our milk processing plant. The candidate will be responsible for laboratory testing of milk and dairy products, new product development, packing material evaluation, batch quality assurance, FSSAI compliance, customer complaint handling, and plant hygiene management.

  • Key Roles & Responsibilities1. Milk & Dairy Products Laboratory TestingConduct routine laboratory testing of raw milk, in-process milk, and finished dairy products.
  • Perform physical, chemical, and microbiological tests including:
  • Fat, SNF (Solids-Not-Fat), Total Solids, Protein, Lactose
  • Acidity, pH, COB (Clot on Boiling) Test, MBRT Test
  • Adulteration tests — detergent, urea, starch, glucose, neutralizers, hydrogen peroxide, formalin, etc.
  • Microbiological tests — Standard Plate Count, Coliform Count, Yeast & Mould, E. coli, Pathogen detection
  • Antibiotic residue testing and heavy metal testing
  • Test incoming raw milk at reception dock for quality acceptance/rejection.
  • Ensure all testing is done as per BIS, FSSAI, and IS standards.
  • 2. Quality Testing for All Dairy ProductsConduct batch-wise quality testing for all dairy products:
  • Pasteurized Milk, Toned Milk, Full Cream Milk, Skim Milk
  • Curd, Dahi, Lassi, Buttermilk (Chaas)
  • Paneer, Cheese, Khoa
  • Ghee, Butter, Cream
  • Ice Cream, Kulfi, Flavored Milk
  • Sweets (Peda, Rasgulla, Gulab Jamun, etc.)
  • Verify fat, moisture, acidity, texture, taste, aroma, and shelf life of each product.
  • Approve or reject batches based on quality parameters.
  • Maintain batch-wise quality certificates and traceability records.
  • 3. Research & Development (R&D)Lead new product development initiatives — new flavors, variants, and dairy innovations.
  • Conduct shelf-life studies, sensory evaluation, and consumer trials.
  • Optimize existing formulations for cost, quality, and taste improvements.
  • Develop value-added dairy products for market expansion.
  • Prepare technical specifications, standard operating procedures (SOPs), and product manuals.
  • Coordinate with production, marketing, and management for successful product launches.
  • 4. Fat, SNF & Compositional TestingEnsure accurate fat and SNF testing for all incoming and outgoing milk.
  • Calibrate and maintain milk analyzers (Lactoscan, Ekomilk) regularly.
  • Cross-verify results with Gerber method / Rose-Gottlieb method for accuracy.
  • Standardize milk composition as per product requirements.
  • Monitor fat and SNF recovery during processing to minimize losses.
  • 5. Packing Material TestingTest packaging materials for food-grade compliance — films, pouches, bottles, caps, cartons, labels.
  • Check GSM, thickness, sealing strength, migration test, and printing quality.
  • Verify packaging materials meet FSSAI and BIS standards for food contact.
  • Approve or reject packaging batches based on quality parameters.
  • Maintain vendor-wise packaging quality records.
  • 6. Batch Preparation & Production SupportPrepare and monitor daily production batches as per standard formulations.
  • Guide production team on standardization, pasteurization, homogenization, and processing parameters.
  • Ensure critical control points (CCPs) are monitored during production.
  • Provide technical support to production for troubleshooting.
  • Approve final batches for dispatch after quality clearance.
  • 7. Customer Complaint HandlingAttend to customer complaints related to product quality promptly.
  • Conduct root cause analysis (RCA) for every complaint.
  • Test complaint samples and prepare investigation reports.
  • Implement Corrective and Preventive Actions (CAPA) to avoid recurrence.
  • Maintain a customer complaint register with status tracking.
  • Coordinate with sales team for customer feedback and resolution.
  • 8. Plant Hygiene & SanitationEnsure strict hygiene standards across the plant — production, packing, storage, and dispatch areas.
  • Implement and monitor CIP (Clean-In-Place) and SIP (Sanitize-In-Place) procedures.
  • Conduct swab testing of equipment, surfaces, and worker hands.
  • Ensure personal hygiene of all workers — uniforms, hair caps, gloves, hand wash, medical fitness.
  • Verify pest control, waste management, and effluent treatment compliance.
  • Conduct weekly hygiene audits and report findings to management.
  • 9. FSSAI Compliance & Regulatory DocumentationMaintain complete FSSAI compliance including licenses, records, and returns.
  • Ensure timely FSSAI license renewal for the plant and all products.
  • Prepare and maintain records as per Schedule 4 of FSSAI Act — hygiene, testing, training, pest control, water testing.
  • Handle FSSAI inspections, audits, and food safety officer visits.
  • File FSSAI annual returns (Form D1 & D2) on time.
  • Coordinate with Food Safety Department, Health Department, and BIS for approvals and audits.
  • 10. FoSTaC & Food Safety TrainingHold a valid FoSTaC (Food Safety Training and Certification) certificate.
  • Conduct food safety training for production workers, packers, drivers, and helpers.
  • Train staff on GMP (Good Manufacturing Practices), GHP (Good Hygiene Practices), HACCP, and personal hygiene.
  • Maintain training records as per FSSAI guidelines.
  • Ensure at least one Food Safety Supervisor per 25 employees as per FSSAI norms.
  • 11. Records Management & DocumentationMaintain complete QC/QA laboratory records — daily test reports, batch records, calibration logs.
  • Prepare and maintain SOPs, work instructions, and HACCP documents.
  • Maintain traceability records from raw milk procurement to finished product dispatch.
  • Ensure record retention as per statutory guidelines.
  • Prepare documentation for ISO 22000, FSSC 22000, and HACCP certifications.
  • 12. Daily Reporting & MISSubmit daily quality reports to management including:
  • Raw milk quality (fat, SNF, adulteration status)
  • Batch-wise product quality
  • Rejections and reasons
  • Customer complaint status
  • Hygiene audit findings
  • FSSAI compliance status
  • Prepare weekly and monthly QC/QA MIS reports.
  • Maintain records in ERPNext / Quality Management System for transparency.
  • 13. Laboratory ManagementManage the QC laboratory — equipment, chemicals, reagents, and glassware.
  • Ensure calibration of all lab instruments — milk analyzers, pH meters, weighing scales, incubators.
  • Maintain adequate stock of chemicals, reagents, and consumables.
  • Coordinate with NABL-accredited external laboratories for third-party testing.
  • Ensure lab safety protocols and proper waste disposal.
  • 14. Statutory & Certification SupportSupport the plant for various certifications:
  • FSSAI License
  • ISO 22000 / FSSC 22000
  • HACCP
  • BIS Certification
  • Halal / Organic Certifications (if applicable)
  • Coordinate with certification bodies during audits.
  • Implement corrective actions for audit non-conformities.

  • Qualifications & ExperienceEducation: B.Tech / M.Tech in Dairy Technology from a recognized university (NDRI, SMC College, WBUAFS, or equivalent) — MANDATORY
  • Certification: Valid FoSTaC Certificate (Food Safety Training & Certification) — MANDATORY
  • Preferred Certifications: HACCP, ISO 22000 Internal Auditor, FSSC 22000
  • Experience: 5–10 years in a dairy processing plant in QC / QA / R&D role
  • Software Skills: MS Office, ERPNext (Quality Module), LIMS (Laboratory Information Management System)
  • Language: Hindi (mandatory), English (working knowledge), Chhattisgarhi (preferred)
  • Key Skills & CompetenciesIn-depth knowledge of dairy chemistry, microbiology, and processing technology
  • Hands-on experience in milk testing, product testing, and packaging testing
  • Strong understanding of FSSAI regulations, HACCP, GMP, GHP, and food safety standards
