Job Description
Responsibilities: Kitchen Manager
- Oversee daily kitchen operations, from prep to service, and keep everything running on time
- Lead, train, schedule and supervise chefs, cooks and kitchen helpers
- Plan and update menus with the chef/management, keeping in mind seasonality, cost and customer preferences
- Control food cost, portion size and wastage to protect margins
- Maintain consistent food quality, taste and presentation
- Ensure strict hygiene, cleanliness and food safety standards (FSSAI, HACCP)
- Manage inventory: stock checks, indenting, ordering and receiving goods
- Coordinate with suppliers and negotiate rates and quality
- Maintain kitchen equipment and arrange repairs and preventive maintenance
- Coordinate with the service/front-of-house team for smooth order flow
- Handle guest feedback and complaints related to food
- Enforce SOPs, recipes and kitchen discipline
- Maintain daily records: stock, costing, wastage and staff attendance
- Ensure kitchen safety: fire safety, safe handling of equipment and gas
