Sushi Commi - Job description:


Responsibilities

  • Prepare sushi rice, fillings, sauces, garnishes, and daily mise en place.
  • Prepare and present sushi rolls, maki, nigiri, and other menu items according to the chef’s recipes and standards.
  • Handle fish, seafood, and other ingredients safely, maintaining correct storage temperatures and preventing cross-contamination.
  • Follow standard recipes, portion sizes, and presentation guidelines.
  • Maintain consistent quality for dine-in and delivery orders.
  • Monitor ingredient freshness, label and rotate stock, and minimise wastage.
  • Keep the sushi section, equipment, and work surfaces clean and organised.
  • Support stock checks and communicate preparation requirements or shortages to the chef.
  • Coordinate with the kitchen team during busy service periods.
