Job Description
- Job DescriptionOversee and manage daily bakery production operations to ensure production targets, timelines, volumes, and quality standards are consistently achieved.
- Directly participate in the preparation and production of bakery products, including mixing, dough preparation, baking, shaping, assembling, decorating, finishing, and packaging, as required.
- Ensure all bakery products are prepared according to approved recipes, standard operating procedures (SOPs), portion sizes, and quality specifications.
- Supervise and coordinate bakery staff, including task allocation, shift planning, work scheduling, training, and performance monitoring.
- Monitor the complete production process to ensure consistency in taste, texture, appearance, portioning, and overall product quality across batches and shifts.
- Ensure strict compliance with food safety, hygiene, sanitation, and workplace safety standards throughout the production area.
- Monitor and control the use of raw materials, maintain appropriate stock levels, minimize wastage, and coordinate with procurement for timely replenishment.
- Check the quality, freshness, and specifications of incoming raw materials and coordinate with the procurement and quality teams whenever discrepancies arise.
- Monitor bakery equipment and machinery to ensure proper usage, cleanliness, and timely maintenance, minimizing production downtime.
- Maintain proper records of daily production, raw material consumption, wastage, inventory, and other relevant operational data.
- Identify production issues, quality concerns, wastage, and operational bottlenecks and take corrective actions to improve efficiency.
- Ensure the bakery production area, equipment, utensils, and storage areas remain clean, organized, and compliant with hygiene standards at all times.
- Coordinate with the Director regarding daily production planning, staffing requirements, product requirements, and operational challenges.
- Provide daily updates to the Director on production output, product quality, wastage, inventory status, staff performance, and any issues encountered.
- Assist the Director in developing production schedules and implementing process improvements to increase productivity, efficiency, and product consistency.
- Ensure timely completion of production orders and maintain smooth coordination between production, procurement, quality, and other relevant teams.
- Take responsibility for maintaining a disciplined, productive, and efficient bakery production environment.
