About the RoleWe are looking for a highly experienced Senior Restaurant Manager / Operations Head to take complete operational responsibility for a 400-cover premium restaurant in Lonavala.

The ideal candidate should be a strong operations professional who can independently manage a large-scale restaurant, build and lead teams, maintain service standards, control costs, and drive revenue and guest satisfaction.

• Key ResponsibilitiesTake complete charge of day-to-day restaurant operations.
• Lead and manage a large FOH and BOH team.
• Manage 400-cover restaurant operations during high-volume service.
• Ensure excellent guest experience, service quality and hospitality standards.
• Handle manpower planning, recruitment, training, grooming and performance management.
• Maintain SOPs for service, hygiene, safety and operational efficiency.
• Monitor food cost, beverage cost, wastage, inventory and operational expenses.
• Coordinate closely with the Executive Chef and kitchen team for smooth operations.
• Drive revenue through table management, upselling, events and operational planning.
• Handle guest complaints and ensure quick and professional resolution.
• Manage banquet, lawn and special events operations whenever required.
• Prepare and monitor staff schedules, duty rosters and attendance.
• Conduct regular operational briefings and training sessions.
• Maintain compliance with FSSAI, hygiene, safety and company standards.
• Prepare daily/weekly operational reports for management.
• Take ownership of restaurant targets, profitability and overall performance.
• Candidate Profile8–12+ years of relevant experience in premium restaurants, hotels, resorts or large-format F&B operations.
• Must have experience handling high-volume / 300+ cover restaurants.
• Strong leadership and team-management skills.
• Excellent knowledge of restaurant operations, service standards and cost control.
• Strong communication and guest-handling skills.
• Should be commercially aware and capable of driving revenue and profitability.
• Experience in pre-opening / opening operations will be highly preferred.
• Candidates from reputed hotels, resorts, premium restaurants or large F&B groups preferred.
• Should be hands-on, disciplined and capable of taking independent operational decisions.
