Job Description: Senior Artisan Baker (Health & Innovation)

Reporting to: Head of Bakery Production 

Role Objective

We are looking for a seasoned Artisan Baker to lead our sourdough and health-focused product lines. You won't just be following recipes; you will be an "edible scientist" helping Yellolife redefine healthy baking through sourdough fermentation, sugar alternatives, and experimental nutrient-dense ingredients.

Key Responsibilities

Sourdough Mastery: Manage the entire life cycle of natural starters. Lead the production of artisanal sourdough breads, ensuring consistent crust, crumb, and flavor profiles.

Experimental Health Baking: Partner with the Innovation lead to develop "clean label" products—integrating millets, ancient grains, and alternative sweeteners without compromising on texture or taste.

Core Pastry & Cake Production: Oversee the daily bake of high-end pastries and cakes, ensuring precise execution of sponges, laminations, and finishes.

Process Optimization: Implement and refine SOPs for fermentation timings, temperature control, and ingredient scaling to ensure 100% consistency.

Quality & Waste Control: Work closely with the Kitchen QC (Rishi) to minimize wastage and ensure every product meets Yellolife’s premium standards.

Required Skills & Qualifications

Experience: Minimum 5 years in a professional artisanal bakery or high-end patisserie.

Technical Expertise: Deep understanding of baker’s percentages, hydration levels, and long-fermentation techniques.

Creativity: A proven track record of experimenting with non-traditional ingredients (e.g., gluten-free blends, vegan substitutes, or keto-friendly bakes).

Leadership: Ability to mentor junior staff and manage high-pressure production schedules.
