The Exchange needs Commis Chef (Commis 1 / 2 / 3)

The Exchange is a 20-seat restaurant opening in Adyar, Chennai. Tamil-rooted cuisine served through global formats with small menu, high precision, owner in the kitchen.

Responsibilities:

• Execute recipes exactly as documented — consistency and precision matter more than improvisation
• Handle daily mise en place: prep, portioning, and pre-service cooking (most dishes are prepared in advance and finished to order)
• Support service-time cooking — broiling, grilling, pan-finishing, and plating under time pressure
• Maintain a clean, organized station at all times — food safety and hygiene are non-negotiable
• Manage stock rotation and flag ingredient shortages before they become a problem
• Work directly with the owner on recipe refinement and new dish development as the menu evolves

Requirements:

• Minimum 1 year of professional cooking experience (Commis 1, 2, or 3 level)
• Ability to follow a recipe precisely and repeat it consistently, service after service
• Comfortable working in a small, fast-paced kitchen with minimal hierarchy
• Basic knife skills and understanding of kitchen hygiene standards
• Genuine interest in food and willingness to learn new techniques and cuisines
• FSSAI food handler certification preferred (or willingness to complete it — company-sponsored)

Working hours: 9-hour shift with 1-hour break, 6 days a week (1 day off per week)

Compensation: Salary negotiable based on experience and skill level. Variable pay is performance and work-based, reviewed periodically.
